Batch 72: Merkin IPA
Straightforward hop-heavy IPA. Northern Brewer had Centennials by
the pound, so they are the backbone of this IPA. I also used some
other leftover hops, as well as a bit of my homegrown ones to completely
torpedo any attempt at consistency :-)
Brewed indoors. Volume was a bit high (and thus gravity low) because
I got impatient, and didn't boil long enough.

Grain Bill
- 15 lbs Rahr 2-row
- 8 oz Briess Carapils
- 6 oz Briess Caramel 40
- 2 oz Briess Caramel 90
Hops
- 2 oz Centennial (9.7% AA) @ 80 min
- 2.5 oz (old) Spalt (4.2% AA) @ 30 min
- 0.7 oz homegrown Mt. Hood (partly dried) @ 15 min
- 1 oz Centennial @ 15 min
- 1 oz Vanguard (4.6% AA) @ 15 min
- 2 oz Centennial @ 15 min
- 1 oz US East Kent Goldings (4.1% AA) @ 15 min
- 2 oz Centennial Dry hops
Yeast
Wyeast 1056, 850 mL stirred starter, pitched at high krausen.
Mash
Single infusion, 60 min @ 155F

Timeline
Brew day: 12/7/08
- 11:27am: Mash-in @~155F, 5 gal 170F water
- 12:30pm: Add first sparge charge (1.5 gal hot water)
- 12:43pm: Start first recirc. and runoff
- 12:50pm: Add second sparge charge (4 gal hot water)
- 1:10pm: All on to boil.
- 1:38pm: Boiling!
- 3:30pm: Chill
- 3:40pm: Done chilling, a bit over volume...
Racked 12/21/08, 5g keg + 5 22-oz bottles. Bottles received 4 primetabs each.
