Batch 68: Steam Beer/Pale Ale
A 10 gallon split batch, half moderately-hopped steam
beer, the other half is destined to be a hoppier
pale ale, dry-hopped with cascades.

- 18 lbs. Rahr 2-row
- 2 lbs. Dingeman's Cara-Munich
Hops
- 2 oz Perle (6.0% AA) @ 60 minute
- 2 oz Northern Brewer (9.3% AA) @15 minutes
- planned: 2 oz cascade dry hops in APA batch
Yeast
White Labs California Lager, 1L stirred starter (steam beer)
2 sachets US-56 (pale ale)
Mash
Single infusion, 105 minutes at 152F

Brew day: November 22, 2006
- 10:40 am: Start heating water
- 11:45 am: Msh-in @152F (25 qts 168F water)
- 1:35 pm: First runnings collected, first 4.5 gallon sparge charge resting
- 1:50 pm: Start 2nd runoff
- 1:55 pm: 2nd runoff done, 2nd 4.5 gallon sparge charge resting
- 2:10 pm: Start 3rd runoff
- 2:13 pm: Everything on to boil
- 2:33 pm: Boiling.
- 2:45 pm: Add Perle hops
- 3:30 pm: Add Northern Brewer hops
- 3:45 pm: Flame-out, start chilling
- 4:00 pm: Done chilling
- 4:30 pm: Pitched, 13.9P
