Batch #48: Munich dunkel
Brewed the same day as the previous batch,
timed much better than the last double-brew day. An easy-drinking dark
lager to go with the Pilsner. Suffered from
the same efficiency problem as the previous batch, too, but without as
disruptive a result.
Recipe
Grain Bill
- 10.75# Meussdoerffer Munich
- 0.25# Weyermann Carafa II de-husked.
Hops
- 2 oz. US Hallertauer (2.8% AA) @90 minutes
Yeast
Rest of crop from Pilsner
Mash
Single infusion mash, 1.25 qts/lb 165F water (never took mash temp).

- OG: 1.047 (1.046 hydrometer, 11.8 Brix from refractometer)

Timeline
Brew day: December 29, 2004
- 3:00: Mash-in with 3.5 gallons of 165F water.
- 4:05: Transfer to lauter tun onto 1 gallon 180+F foundation water.
Assume 1 pint/lb retention, giving 2 gallons + 1 pint free liquid.

- 4:22: Add 2nd sparge water batch of 3.5 gallons.
- 4:27: Finish second runoff.
- 5:00: Boiling! (refractometer give 8 brix? What's going on here?)
- 5:15: Add hops.
- 6:30: Add whirlfloc.
- 6:45: Start chilling.
- 6:50: Finally got the bubble out of the line. Wort flowing through Therminator fine.
- 6:55: Done transferring, wort at 66F.
- 7:20: 11.8 Plato (refractometer, about 1.0476), 1.046 (hydrometer)
- 7:25: Pitched and stowed in low-mid-50s basement.
- 8:00: Done with clean-up.
1/1/2005: seems to have stopped fermenting (?), may need to check on this one a bit more.
1/2/2005: took hydrometer and refractometer readings.
Refractometer reads 7.8 brix, with the correction calculation
from primetab.com,
puts this at 1.022. Hydrometer roughly agrees, 1.020-24 (still
foamy, can't shake all the bubbles, but it's in that range).
Wort is gassy and yeasty, which means there's still hope that
it's fermenting, just not kicking up a persistent head. Will let it
rest a couple days and do the refractometer reading/calculation to
see if it decreases....
1/5/2005: Took a refractometer sample, 7.8 Brix,
corrected gives 1.021. Not much of a drop, so there
may be a need for a rescue yeast :-(
1/10/2005: Another reading, no change. Added sachet of Saflager S-23, hope for the best.
1/14-15/2005: Another reading, no change. Kegged, and hope for the best.
