Batch #48: Munich dunkel

Brewed the same day as the previous batch, timed much better than the last double-brew day. An easy-drinking dark lager to go with the Pilsner. Suffered from the same efficiency problem as the previous batch, too, but without as disruptive a result.

Single infusion mash, 1.25 qts/lb 165F water (never took mash temp).

Brew day: December 29, 2004 1/1/2005: seems to have stopped fermenting (?), may need to check on this one a bit more.

1/2/2005: took hydrometer and refractometer readings. Refractometer reads 7.8 brix, with the correction calculation from primetab.com, puts this at 1.022. Hydrometer roughly agrees, 1.020-24 (still foamy, can't shake all the bubbles, but it's in that range). Wort is gassy and yeasty, which means there's still hope that it's fermenting, just not kicking up a persistent head. Will let it rest a couple days and do the refractometer reading/calculation to see if it decreases....

1/5/2005: Took a refractometer sample, 7.8 Brix, corrected gives 1.021. Not much of a drop, so there may be a need for a rescue yeast :-(

1/10/2005: Another reading, no change. Added sachet of Saflager S-23, hope for the best.

1/14-15/2005: Another reading, no change. Kegged, and hope for the best.
